Zucchini Muffins, Recipe

Zucchini Muffins w/ cinnamon frosting

3/4 c. butter
1/2 c. packed brown sugar
1/2 c. white sugar
2 eggs
1 tsp. vanilla
1 3/4 c. flour
1 1/2 tsp. baking powder
2 cups shredded zucchini
1 cup coconut (optional)
3/4 cup nuts (optional)

cream butter, add sugar, vanilla & eggs. Mix & add dry ingredients. Mix, add zucchini & coconut & nuts.

Put in 350 degree oven 45 minutes – 1 hour. Cool & frost.

Frosting:

1 c. powdered sugar
2 1/2 tsp. milk
1 1/2 T butter
1 tsp. vanilla
1 1/2 tsp. cinnamon

Whip up.
